What is the name of the offensive move when a player drives in and performs a soft jump off of one foot diagonally/ to the side to avoid the defender, landing on both feet? Also, after performing this move can the player now pivot, or is it considered a travel since the player jumped off only 1 foot?

I believe you're referring to the "pro hop". If the player gathers the ball (picks it up with two hands) after jumping off 1 foot, then they can pivot after landing on their 2 foot jump stop. But if they grab the ball with two hands as they jump (while the foot is on the ground), they can't pivot legally after landing on two feet. It all depends on when the dribble is terminated... which can be difficult for some refs to see, and occasionally, some don't even know the actual rule.
